First Course: High West Double Rye
Gin and Beetroot Cured Salmon, featuring cured Tasmanian salmon, lemon myrtle and fennel buttermilk, and rye crisps
Second Course: High West Bourbon
Signature Dry-aged Porterhouse, accompanied by turnip fondant, yellow carrot, pickled radish, yarrow, and a delectable jus
Third Course: High West Campfire
Walter’s S’more, a tantalising house-made rosella marshmallow, smoked chocolate ganache, and Graham cracker creation
