One of my delights during our cooler months is making up new soups that are super healthy, tasty, economical and not complicated.
I prefer to use ingredients in season and find that one can live well on the tastiest of dishes and with little outlay.
Although I am not a vegetarian, this recipe is perfect for vegans.
It is not complicated and of course you can add any vegetable, or more of the same.
For me this captures the two main flavours, tomatoes and zucchinis, with a touch of turmeric.
Most of my created recipes are trial and error and not always to measurement. But I have to say if there is any error I am not aware of it as I enjoy every dish.

Quick & Easy: Vegetarian Tomato and Zucchini Soup
Ingredients:
- Tomatoes medium/large x 7
- Zucchinis large x 2
- Red capsicum x 1
- Vegetable stock cubes to taste x 2-3
- Water x 3 cups
- Turmeric x 1 teaspoon
Method:
- Chop vegetables into chunky pieces
- Place all ingredients in a medium to large pot with water
- Boil until simmering then reduce heat to low and cook until vegetables tender
- Serve either as a chunky soup or blend for smooth consistency
- Garnish with a tablespoon of either grated parmesan cheese or Greek yoghurt depending on your taste
- Ground pepper for an extra bite
Costs approximately $7 AUD in total and produces approximately 4 large bowls of soup. Economical, healthy and simple to make!
