I love this time of the year when Summer is just around the corner, it means it is time to start creating fresh and delicious salads.
I don’t like to waste food, so when I cook a roast chicken for dinner I always make sure I keep the left overs. This means the next day I can make an easy, healthy and yummy salad.
Ingredients
- Last nights leftover chicken
- 1 medium avocado, halved and thinly sliced
- 80g baby rocket leaves
- 1 small red onion, halved and thinly sliced
- Hand full of mix seeds and sultanas
- 2 tablespoons lime juice
- 1 crushed garlic clove
